Tomorrow, Tuesday the 21st is “Fat Tuesday,” the last day of Carnival and the day before Lent.  If you live in New Orleans, you’ve been out partying and eating amazing food.  If you live in New Jersey, you most probably have not been a part of Carnival, but if you’re a foodie you can still enjoy some of the wonderful cuisine.

The following link will give you some sumptuous recipes so that you can cook Creole.  I sent this to a friend of mine who is from New Orleans and she said

“The recipes are very authentic, which is unusual. Most of the time it’s pretend Cajun food but these are real recipes, like the hard sauce with bread pudding is real New Orleans, and the Herbsaint or Pernod in Oysters Rockefeller is great, I just would not say it’s an optional ingredient.  It’s a must!”
